So Thanksgiving rolled around, and here’s my substitute for apple pie. After a while, pie sucks. It doesn’t take much skill to buy a frozen crust, plop fruit and sugar inside it, and bake at 350 ’til golden brown. Anyone who does this, and claims to have baked…is a liar.
After some hunting around, I found this recipe: “Frosted Carmel Apple Layer Cake.” 5 words for one dessert, so you know it’s gotta be good!
Here then, courtesy of the fine folks at Whole Foods, is the recipe. Pretty easy to make, and ended up very (very) tasty….
Ingredients
- 2 cups whole wheat pastry flour
- 1¾ cups all-purpose flour
- 1 tablespoon baking powder
- 1½ teaspoons baking soda
- 1½ teaspoons ground cinnamon
- ½ teaspoon fine salt
- 1½ cups light brown sugar
- ¾ cup canola oil
- ¾ cup unsweetened applesauce
- ¾ cup dulce de leche
- 2 teaspoons vanilla extract
- 3 eggs
- 1½ cups buttermilk
For the Apple Frosting
- 5 cups (about 1¼ lbs.) confectioners’ sugar
- ½ cup (1 stick) butter, softened
- 1/3 cup apple cider
- ½ teaspoon ground cinnamon
- Pinch of fine salt
